Black & Blueberry Cobbler Triple Fudge Surprise



OH MY GOSH, Such yummy food ladies!!! If you aren't coming to our club then you are definitely missing out!! Pam is working on posting the recipes, be patient, she's a little frustrated! We had some most excellent dishes! We had chicken enchiladas and meatloaf and a mexican style pork and french onion soup and minestrone and lots of desserts, like triple chocolate surprise and pumpkin pie pudding and lemon pudding cake and black and blue cobbler and peach cobbler. We definitely have the best cooks in our ward! We are blessed and I think you should come and enjoy the fruits of their labors!!!! If not I don't know what to tell ya :(
Next time we are combining with another ward and it will be held at the church. Please come and meet new friends and get new ideas, we would love to have all of you there!!!

Cheesy Chicken Enchiladas YUM-O

I came across this recipe and I don't remember where I found it, but we tried it and it is so easy and delicious that I just had to share!
CHEESY CHICKEN ENCHILADAS
1 lb. boneless chicken cut up into 1/2" pieces
1 pkg. taco or chicken taco seasoning mix
Cook chicken with seasoning and water, that is called for on the pkg. in a hot skillet. You can also use beef or sausage.
1 jar of favorite salsa
1 can black beans, rinsed and drained
1 8 oz can corn, drained
2 cups shredded mexican style cheese
1 can 15 oz. mild enchilada sauce
8 large flour tortillas
2 Tbsp sliced black olives
2 Tbsp sliced green onions (optional)
Prepare chicken, cool about 10 minutes, stir in salsa, beans, corn and 1 cup cheese.
In bottom of 13X9 pan spread 1/4 cup enchilada sauce, soften tortillas, as directed on pkg. Place 2/3 cup chicken mixture down center of each tortilla; roll up and place seam side down in pan.
Repeat with rest of tortillas and pour remaining enchilada sauce over tortillas; sprinkle remainder of cheese over and sprinkle with olives and onions. Bake at 375 for 20 minutes.
Next time I want to add some rice to these ;)


This is Maxton, my grandson who is so so smiley!!! Isn't he so cute? We think so, he will be 5 months on the 19th.

Las Vegas



Cactus Garden at Ethel M's in Las Vegas

New Year's Day we went to Vegas for a few days. It was nice to get away from the cold!! We mostly shopped while the guys golfed. I got thrown in the pool in my towel, because my son in law is crazy!! I think Linsey and Colton and Chase all got thrown in at some point! It was a lot of fun though.
