The funnest car and pretty quick too, I love it! If you ever need a thrill call me up and I'll take you for a ride. You can't be afraid of the G's though. This isn't your typical 4wheelin jeep, more like a race car!! It's a Jeep SRT8. Red rock crystal pearl is the color and sometimes it looks maroon and sometimes it looks more orange ( I don't like that so much.) We wanted gunmetal or black but didn 't want to wait 6 months.

We went out a few weeks ago when it was foggy down by the lake and took some really awesome pictures. Amanda and I love to take pictures of scenery and the kids just go along for the ride. Thought this was a nice picture. The frost was so cool on the limbs of the trees.
I think this was an old corn stalk, the frost was incredible.

I Miss Him!

I am missing my Flipper! He is in St. George competing in the polynesian golf tournament. I wish I would have been able to go with him. He is going to Hawaii at the end of February WITHOUT me. BOOOO! I will miss him then too. He has all the FUN! I love him so much!

Cooking Club

Black & Blueberry Cobbler Triple Fudge Surprise



OH MY GOSH, Such yummy food ladies!!! If you aren't coming to our club then you are definitely missing out!! Pam is working on posting the recipes, be patient, she's a little frustrated! We had some most excellent dishes! We had chicken enchiladas and meatloaf and a mexican style pork and french onion soup and minestrone and lots of desserts, like triple chocolate surprise and pumpkin pie pudding and lemon pudding cake and black and blue cobbler and peach cobbler. We definitely have the best cooks in our ward! We are blessed and I think you should come and enjoy the fruits of their labors!!!! If not I don't know what to tell ya :(
Next time we are combining with another ward and it will be held at the church. Please come and meet new friends and get new ideas, we would love to have all of you there!!!

Cheesy Chicken Enchiladas YUM-O

I came across this recipe and I don't remember where I found it, but we tried it and it is so easy and delicious that I just had to share!
CHEESY CHICKEN ENCHILADAS
1 lb. boneless chicken cut up into 1/2" pieces
1 pkg. taco or chicken taco seasoning mix
Cook chicken with seasoning and water, that is called for on the pkg. in a hot skillet. You can also use beef or sausage.
1 jar of favorite salsa
1 can black beans, rinsed and drained
1 8 oz can corn, drained
2 cups shredded mexican style cheese
1 can 15 oz. mild enchilada sauce
8 large flour tortillas
2 Tbsp sliced black olives
2 Tbsp sliced green onions (optional)
Prepare chicken, cool about 10 minutes, stir in salsa, beans, corn and 1 cup cheese.
In bottom of 13X9 pan spread 1/4 cup enchilada sauce, soften tortillas, as directed on pkg. Place 2/3 cup chicken mixture down center of each tortilla; roll up and place seam side down in pan.
Repeat with rest of tortillas and pour remaining enchilada sauce over tortillas; sprinkle remainder of cheese over and sprinkle with olives and onions. Bake at 375 for 20 minutes.
Next time I want to add some rice to these ;)


This is Maxton, my grandson who is so so smiley!!! Isn't he so cute? We think so, he will be 5 months on the 19th.

Las Vegas

New Year's Day we went to Vegas for a few days. It was nice to get away from the cold!! We mostly shopped while the guys golfed. I got thrown in the pool in my towel, because my son in law is crazy!! I think Linsey and Colton and Chase all got thrown in at some point! It was a lot of fun though.

"Twofer" Pie (English version)Single Crust Sweet Tart Dough
1 ½ cups all purpose flour
½ cup confectioners’ sugar
¼ tsp salt
9 tablespoon very cold unsalted butter cut into small cubes
1 large egg yolkPumpkin filling
1 cup canned unsweetened pumpkin puree
⅔ cup heavy cream
½ cup packed light brown sugar
1 large egg
1 large egg yolk
2 tsp. dark rum
½ tsp. pure vanilla extract
½ tsp. ground cinnamon
¼ tsp. ground ginger
¼ tsp. saltPecan filling
½ cup light or dark corn syrup
¼ cup packed light brown sugar
2 tbsp. unsalted butter, melted
1 large egg
1 large egg yolk
½ tsp. pure vanilla extract
¼ tsp. ground cinnamon
Pinch of salt
1 ½ cups pecan halves or piecesFor the sweet tart dough crustPut the flour, sugar, and salt in a food processor and pulse a couple of times to combine (or mix flour, sugar and salt in bowl if you will be using a pastry cutter).Scatter the pieces of butter over the dry ingredients and pulse until the butter is coarsely cut in (or use a pastry cutter to get the same results). You should have some pieces the size of oatmeal fakes and others the size of peas.Stir the yolk, just to break it up, and add it a little at a time, pulsing (or mixing with a fork) after each addition.When the egg is in, process in long pulses- about 10 seconds each- until the dough, which will look granular soon after the egg is added, forms clumps and curds. Just before you reach this stage, the sound of the machine working the dough will change- heads up.Turn the dough out onto a work surface and, very lightly and sparingly, knead the dough just to incorporate dry ingredients that might have escaped mixing.To press the dough into the pan: butter a 9-inch fluted tart pan with a removable bottom. Press the dough evenly over the bottom and up the sides of the pan, using all but one little piece of dough, which you should save in the refrigerator to patch any cracks after the crust is baked. Don’t be too heavy handed- press the crust in so that the edges of the pieces cling to one another, but not so hard that the crust loses its crumbly texture.Freeze the crust for at least 30 minutes, preferable longer, before baking.Center a rack in the center of the oven and preheat to 375 degrees F.Butter the shiny side of aluminum foil and fit the foil, buttered side down, against the crust. (since you froze it, you can bake it without weights).Put the tart pan on a baking sheet and bake the crust for 25 minutes.Carefully remove the foil. If the crust has puffed, carefully press it down with the back of a spoon. For partially baked crust, patch the crust if necessary, then transfer the crust to a cooling rack.For the pumpkin fillingPulse all ingredients together in a food processor (or blender). Leave filling in bowl.For the pecan fillingIn a bowl, whisk together all ingredients except pecans until smooth.Preheat oven to 450°.To assembleGive the pumpkin filling one last quick pulse, then remove bowl, rap it on counter to debubble batter, and pour filling into crust.Top pumpkin filling evenly with pecans, then pour over pecan filling. Poke down any pecans that float to the top and aren't covered with filling.Bake pie for 10 minutes.Reduce oven temperature to 300° and bake for another 35–40 minutes, or until it is evenly puffed and a slender knife inserted into the center comes out clean (total baking time, 45 to 50 minutes).Transfer pie to a cooling rack and let it stand until it is just warm or until it reaches room temperature.Source: Baking, From My Home to YoursDorie Greenspan - adaptation
